Which is the best option for flying?

Hi guys. My partner and I are planning our trip to SA in December. We are trying to figure out what the best driving route is for our travels.

We're flying into Cape Town and driving to Stellenbosch for 3 nights then on to Knynsa for 2. We then need to fly to Durban, but we're not sure if it would be best to fly from Port Elizabeth or drive back to Cape Town and fly from there. My partner has some hesitation in driving to PE as he's not familiar with the drive. Also the flight from there leaves at 10:30 am. This would mean we would have to get up quite early to drive from Knysna.

I'm also concerned about driving at night. The flights get us into all our destinations in the evening. Maybe I'm being overly paranoid, but my partner is South African himself and he's rather concerned as well.

Any help would be appreciated.
